I am on a mission to explore the full range of exquisite flavors that can be found in chocolate, beginning with raw cacao beans from around the world. Each bean's origin boasts a unique flavor, which we elevate and honor in the preparation of its chocolate. I am a creative at heart. I love exploring new ways to express what I see and feel about the world. I love introducing others to different perspectives on creativity, flavor, and experience. I love creating an experience.
I started teaching myself how to make chocolate from bean to bar in 2014, and haven't looked back. The more I learn about chocolate, about its history, the substance, and its relationship with people, the more interesting it becomes to me.
My first chocolate grinders occupied our home kitchen, which I quickly outgrew. The next step was a small production kitchen in Epping, New Hampshire. This was a wonderful place to develop my approach to exploring flavor in cacao. In 2020 my husband Matt and I moved the whole production to Exeter (where we live) and built out our factory and cafe.
This year my tiny factory is on track to process about 2.5 tons of cacao beans into pure chocolate.
